Strawberry Cheesecake Smoothie

Makes 3 servings

2 bananas
6 strawberries
1 inch pineapple ring. (Or about 1/2 cup)
1/2 cup coconut milk
1.5 cup water
2 Tablespoon lemon juice

Optional :
vanilla bean,
ice if any of the fruit is not frozen
Include the strawberry stem-little greens if its organic and washed well

Blend on high until smooth and enjoy cold.

Notes:
– Always wash fruits and veggies with scent free natural dish soap. I let them soak in a bowl of soapy water. This is especially important for conventionally grown produce, to remove pesticide residue (or as much as you can).
– When storing fresh produce, after washing, dry, then spray with food grade hydrogen peroxide. Allow to dry completely before storing. The produce will last longer, you will also be able to tell if any has gone bad because the food grade hydrogen peroxide will bubble, discard those. You can eat it with dried peroxide if raw (or wash it if you want) and i be sure to rinse off the produce once more before cooking.

Summer Delight Smoothie

Perfect smoothie or summer fruits for a hot summer day

We decided to end our master cleanse today but had some left over lemons and maple syrup so we added it to our mango orange juice and this is the fantastic result! Chris says its like an orange Julius.

1 mango, peeled and put removed
2 oranges, juiced
1 lemon, juiced
1 Tbsp Pure Maple Syrup
1/4 C Coconut Milk
1 Cup Ice (omit if using frozen mangos)

Blend on high until smooth. Serve immediately.

Chocolate milk

1 cup water
1/2 banana
1 tsp carob powder
1/8 tsp vitamineral green powder
1 tsp almond butter
1 date
Dad of salt -optional

Blend all ingredients until smooth

Strawberry ‘Milk’

Strawberry ‘Milk’
5 frozen strawberries
1 ripe banana
1 large mejdool date
2 cups water

Starfruit Spinach Juice

Juice the following:

2 starfruit
1 handful of spinach
1 apple or pear

Enjoy!

You won’t taste the spinach, but your juice will be nice and green and you will surely get the chlorophyll!  Even my toddler will drink this yumminess.

Heaven in a Cup Juice

Juice the following ingredients

2 Starfruit
1 apple
1 pear
1 mango
4 grapes

Now that is what I call heaven in a cup!

Oat Milk

Take a trip to your local supermarket or health food store and you will soon find that non-dairy milk, while many are super yummy, are fairly pricey.  Home-made milks are fast, easy, and cheap to make.  My favorite one is oat milk.

A 32 ounce of Oat milk is approx $3-4 while 32 ounce of home made oat milk will cost about 10-25 cents to make.  For me the true upside is that I know my oat milk is fresh, and exactly what ingredients are in it, because I put them in.  Okay, I love the price too.   

Plain Oatmilk:

1 cup of cooked oat meal
4-6 cups boiling water

Put the oatmeal and water in a blender and blend on high until smooth.  Add more water for a finer consistency.  can be strained or not, depending on your taste.  Allow to cool and store in refrigerator.  Stays good for approx 3-4 days.

Ratio for 1 Cup Cooked Oatmeal:
Oat Groats, 1/4 cup + 3/4 cups water
Steel Cut Oats, 1/5 cup + 4/5 cups water
Rolled Oats, 1/3 cup + 2/3 cups water
Quick Oats, 1/2 cup + 1/2 cup water

Very quick oat milk:
1/8 C quick oats (can use any type of oats, quick oats will just turn into powder much faster)
2-4 cups of water

In a coffee grinder, on fine, grind the oats into a powder.  Add water and serve.  Can also be made one cup at a time, just store the oat powder, mix 1-2 Tbsp with 1 cup of water.

Raw Oat Milk

1/4 Cup Raw Oats
4 Cups Water

Soak Oats in water overnight, or 4-8 hours in an air-tight container, can be soaked in the fridge

Blend and add additional water to get your desired consistency.

Oat Milk Sweeteners:

Oat milk can be sweetened with agave nectar, dates, maple syrup, or any other sweetener of choice, just add it in before blending.

Oat Milk Flavors:

Chocolate: Unsweetened Chocolate powder + Sweetener of Choice – heat for hot cocoa – nice and creamy!
Banana: blend with a banana
Vanilla:  Add vanilla bean or extract
Strawberry: Add fresh, frozen or dried strawberries
Chai: use the oat milk in your favorite chai recipe
The possibilities are endless

Uses:
Oat milk can be used in recipes that call for any other type or milk.

Gluten Free:
Oats are gluten free, however they typically are processed on equipment that processed gluten products.  If you have celiac disease be sure to test oats before eating them & always make sure the oats are labeled gluten free, they will be more expensive than regular oats, but the price of making oat milk will still be very cheap.

Rice Milk

Since embracing the McDougall way I have been getting very inventive with our food.  Very rarely do we drink any type of milk (nor do we have dairy), but on occasion J loves coconut milk.  He’s a 3 year old, I’m not concerned with the fat content in coconut for him, nor do I restrict his diet.  However, I am finding that he prefers the low-fat food over what he used to eat. For example, this morning I made him rice cereal, with coconut milk, he ate about half of it.  Then I made some rice milk and made myself some cereal, he ate it up!  I tasted a tiny bit of his while I was preparing it and instantly my face and lips became oily, yuck, what a difference!  My body has become so clear that it will eliminate oil so much quicker.

Rice Milk from cooked rice

1/2 C cooked brown rice
1 1/2 C water
dash salt
opt:  vanilla, dates, maple syrup  (I leave my sweetener out, and add it to the dish instead)

Blend water and rice until only some mush is left of the rice.  Strain twice.  Add other ingredients and mix. Store in refrigerator.

 

Rice Milk from raw rice

1 C uncooked brown rice
4 C water
dash salt
opt:  vanilla, dates, maple syrup

Rice Cooker:
Rinse rice
Cook water and rice in rice cooker until done.  Blend, add more water if needed.  Add sweetner, dash of salt, &/or vanilla.  Store in fridge.

Stove-top:
Bring water to a boil, add rice.  Bring to boil, stir occasionally.  Take off heat, set aside, covered, for 3 hours.  Cook again for approx 20 min, or until the rice is very soft and sticky.   Blend & strain 2x.  Add sweetner, dash of salt, &/or vanilla.  Store in fridge.

 

Add water to taste, the less water, the thicker the milk will be, the more water, the thinner.  The flavor will be more mild the more water added while blending.

The strained rice can be used for a mushy rice cereal, just add sweetener and enjoy.

Almond Milk

1/4 C Raw Almonds
1 C Pure Water

Soak Almonds for 8-12 hours, they will plump. Discard water and remove skins, they should slide off easily.

Use less water for a thicker consistency.

1/2 C soaked almonds
2 C Pure water
2-3 Dates
Optional: Pinch of sea salt, nutmeg, cinnamon

Mix all ingredients in a high speed blender. I use a hand blender, a high powered blender like a Vitamix or Greenstar will make it a smoother and make more milk, but with a good strainer either way will work.

Strain & serve.
-A fine mesh metal strainer will work however you may find pieces floating at the top after it settles, it is also takes some work to strain it all, as the pulp will line the strainer and clog it, I stir with a spoon to let the liquid go through.
-Nut milk bags are great however they can be expensive and hard to clean.
-The best nut milk strainer I have used is a tea towel, also called a flour towel. I bought a pack of them in white cotton for $6/10 towels (I’m sure they can be found organic I bleached too). I lay the towel over a large strainer or funnel, laying over a large bowl or container to catch the liquid. Once it’s all strained ball up the towel with the pulp in a ball and squeeze out the liquid.

Stays for approx 3 days in tightly closed container in the fridge.

The left over pulp can be used to make almond yogurt and almond cheese. It can also be added to batters for baked goods, especially cakes and cookies. I freeze the pulp in a silicon mold (any kind will do), and save it for baking recipes.

ABC plus Juice

Every time I make a juice I think of hanging out with our good friend Frank, usually at Josh’s Organic Market in Hollywood Florida.  Having a great conversation, and some laughs, listening to the ocean and watching the waves.  And watching the moon rise over the beautiful florida beach!  So needless to say I make juices often.  Inspired by Josh’s ABC Juice, and added a little twist of my Something Good.  I hope you find your loving space with this juice too.

1 beet
1 apple, green or yellow are usually best
2 carrots
1 large cucumber
3 celery stalks
5 leaves of romaine lettuce
1 starfruit

wash, peel and cut all ingredients into the right size for your juicer.  Run through a juicer, I prefer the Champion or Greenstar.  Drink and enjoy!

If the juice is too sweet for you, use only half the amount of fruit and up the celery, cucumber and romaine.

If you can’t find any starfruit that’s ok, it adds a little something special to the juice but without it this is still a good juice.

Note:  Juice the celery last as it tends to leave lots of shreds in even the most professional juicers.  The beets and carrots stain, so if you juice them first the other ingredients will somewhat clean the staining.

Don’t have a juicer?  Cut up the ingredients very fine, or shred in a food processor.  Blend very well with a hand blender or regular blender, and strain through a multi-layered cheese cloth or nut-milk bag.  Kind of messy but hey it’s an option.
