Bruschetta

Tomato – heirloom and cherry tomatoes will have the best flavor.
parsley
Olive Oil
Salt
Lemon juice

Cube tomato, dice parsley, mix with remaining ingredients to taste.

Variations:
Wrap in romaine lettuce or kale for a great raw dish.
replace the parsley with basil or cilantro depending on what your eating it with.
Cilantro works well with Mexican style dishes, tortilla chips, fajitas, wraps
Parsley or Basil for Italian dishes, semolina bread, pasta.  Parsley has a more subtle flavor than Basil.

For some summer fun add cubed mango to the dish.  In this case use little to no lemon.
