Carrot Apple Salad

This is one of the simplest and most palate pleasing dishes we make. Chris has fond memories of his grandmother feeding him this. My mom also remembers eating this as a child in Israel. While it’s a great dish to eat right away it gets even better with time, the flavors all mingle together and soak into the apple and carrot after a few hours.

4 carrots, peeled
1 apple, cored (peeled if you prefer)
2 oranges, juiced (or 2 lemons)
1/4 cup raisins

wash and cut all fruits and veggies, then shred in a food processor, or if you want to experience the art of patience shred by hand. Mix together in a large bowl with raisins.

Juice the orange (or lemon) & add to the mixture.
