This recipe is very similar to the carrot apple salad, but with a few different ingredients.
4 carrots shredded
1 apple shredded
1 pear shredded
1 small beet shredded
small handful of parsley, finely chopped
1/4 c raisins or dried turkish figs, chopped
1 lemon, juiced
Mix all ingredients together and serve.
The easiet was to make this is to:
clean and cut all items to be shredded into proper size for food processor. Shred the beets and carrots first, then the apple and pear.
Mix with all remaining ingredients in a large bowl.
This dish gets better after it sits overnight, so making more than you can eat is a good thing, you’ll love it even more the next day, or even a few days later. And the best part is that on the following days you wont have to do any prep work!
