Roasted Potatoes

This recipe can also be called baked fries – depending on how you slice the potatoes.

Yellow Yukon Potatoes
Olive Oil
Italian Seasoning
Sea Salt

Pre-heat oven at 450 F
Wash & Peel Potatoes (can leave skin on if it’s organic – just peel the blemishes)
Cut potatoes in half and then cut into thick slices, wedges, or chunks.
In a mixing bowl, sprinkle seasonings (except paprika), and enough oil to lightly coat.  Toss so all the potatoes are coated.
Line a baking sheet with parchment paper.
Place potatoes onto sheet, spread out.  Sprinkle on paprika.
Bake for 10 min, flip and bake 5-10 more min, until ready – golden brown.

A note about parchment paper – Whatever is touching the parchment surface will cook faster than the top. So you will not see if the potatoes are golden unless you flip them.

A note about salt & pepper – I do not cook with salt or pepper – unless absolutely necessary, instead I add before serving, or leave it out completely and provide a nice seasoned sea salt and fresh cracked pepper on the table, so each person can decide how much they want.
