This is one of my favorite sauces. It comes out like a cheese and works great mixed with pasta and rice.
1 can coconut milk
1 butternut squash, medium, peeled, chopped, seeds removed
Salt & Pepper to taste
In a sauce pan cook the coconut milk, water, butternut squash and Italian seasoning on medium heat. Stir occasionally, cook until the squash is soft. Blend with a hand-blender to make it smooth. Mix in remaining ingredients. The nutritional yeast will give it a cheesy taste and lots of great nutrients. Add enough to make it the right taste, so be sure to sample as your adding it.
Pour over pasta, rice, or any dish of your choice.
