Mashed Cauliflower

“Wow that’s the fluffiest mashed potatoes I’ve ever had!” was my response the first time I tasted this.  Certain to please and surprise!

1 head of cauliflower, washed, leaves & stem removed
1 large pot of boiling water
Sea Salt

Boil (or steam) the cauliflower.
When soft place in large bowl and mash by hand or in a food processor.  Add salt to taste.

Oil, butter, milk, etc. is not necessary, since this is such a light and fluffy constancy.
