Raw Hummus

1 Cup sprouted Chick peas
1/4 C water
handful of fresh herbs (basil, dill, parsley or cilantro)
1 celery stalk, washed, leaves removed
1 carrot, washed, peeled, ends removed
3 Tablespoons Lemon juice
1 T plum or apple cider vinegar
1 teaspoon of sea salt (or to taste)
1 teaspoon cumin
2 Tablespoon Italian seasoning
dash fresh black pepper

Blend all ingredients in food processor, or blender.  Serve

Add more or less water depending on your taste.  More water will make a dressing, less will be more chunky.  Keep in mind that the less water you add the harder it will be to blend, so be prepared to mix in small batches if need be.

This can also be a mock-tuna salad if made with dill and very little water.
