1 onion, diced
2 carrots, sliced
1 celery stalk, chopped
3 chopped tomatoes
1 bouillon cube
turmeric to taste
3 beets, peeled and quartered
zucchini, or yellow squash, chopped
optional: add fresh herbs and seasoning of choice
Saute the onion in a bit of water, add the seasoning. Cook until onion is soft. Add all the rest of the ingredients and fill pot with water. In pressure cooker, cook for 15 min on high. On stove cook on high for 45-60 minutes, or until vegetables are tender.
Can be served with rice, or grain of choice, or enjoy on it’s own.
