One of our favorite treat in my house, are vegan cupcakes!
They are usually low-fat & gluten free, but no matter how I make them there is one frosting that we have found to be the best, what’s better than Cream Cheese, ok chocolate ganache is pretty close…
1 tub of Vegan Cream Cheese
Mix the cream cheese adding some agave and then some coconut powder, the powder will stiffen (and add a mild coconut flavor) and the agave will sweeten.
not knowing how much is part of the fun, because you will have to keep tasting it as it goes along.
I also love to add a vegan food based coloring and some sprinkles. Oh yum, time to make the cupcakes…
Optional: you can use powdered sugar instead of the agave and coconut.
