Roasted Vegetables

Any of the following:

yams
sweet potatoes
potatoes
beets
carrots
brussel sprouts
any root vegetable

1 apple
1 onion (optional)
driddle of olive oil
maple syrup (optional)
italian seasoning
dried rosemary

Peel & chop up the veggies & apple into large piece.  Driddle a small amount of oil and remaining ingredients and mix.  Roast at 400 degrees F for 1 hour (or more).  Toss the veggies every half an hour or until well cooked.
