We have made sweet potatoes in so many different ways, as baked fries, in stews, w roasted veggies, in pancakes, the list goes on, yet every time I make it this way we always say this is the best way to eat a sweet potato.
Preheat oven to 400 degrees F.
Wash the sweet potato, keep peel on.
Cover baking pan w parchment paper
Place sweet potato on paper and cook in oven for 30-40 minutes or until liquid comes out of it and starts turning brown. Sometimes I let that liquid burn, which makes it even better.
Remove from oven, let it cool enough to remove the skin and serve. Skins should roll right off. The sweet potato will be caramelized and sometimes have a glazing just under the skin.
Best to use small to med sweet potatoes, they come out sweetest. This works well for the orange and white varieties.
