I recently made this quick and easy babaganoush.
Slice up eggplant thin, brush with olive oil, place on baking sheet lined with parchment paper. Bake on 375 until soft. -OR- grill on a non stick grill (no oil) until soft.
Blend with hummus of choice. -OR- blend with tahini, lemon, salt, pepper, and Italian seasoning to taste.
-add garlic to taste
-grill onions the same way as eggplant and add them in when blending
