Add a little twist to your mashed potato dish – carrots!
Carrots (approx 1 carrot per potato)
Dill, fresh minced
Sea salt to taste
Boil potatoes and carrots until soft
Remove from water, place into a large bowl and add remaining ingredients plus some of the water used to boil, only a small amount is needed.
Mash by hand for chunky, use a hand blender for smooth.
Optional: any of these can be added to your liking – vegan butter or milk, herbs, spices, coconut or olive oil, turmeric, Italian seasoning, mashed avocado.
Note for McDougall followers, adding oil, avocado, vegan butter is not recommended and will increase the fat content. I find this dish really doesn’t need it.
