Black eyed pea and kidney bean salad

The great thing about bean salad is you can’t mess it up! Add any ingredients that are appealing to you and some beans you love and you have a delicious, nutritious, protein packed meal!

Here’s a beautiful salad I made for my husband Chris the other day, as I said in my last post, he loves beans, salad, and bean salad!

ingredients
1 can or 2 cups, cooked black eyed peas, drained
1 can or 2 cups, cooked kidney beans, drained
1 large orange tomato (any tomato will do
1 purple tomato (again any tomato will do)
1/4 red onion, diced
8 kale leaves, stalks removed, sliced into thin short strips
1 sweet cubanelle pepper or colored bell pepper, red, orange or yellow pepper (see my note below about green peppers), chopped
Sea salt and pepper to taste

Optional: fresh lemon juice, it will stay fresher with it.

Mix all ingredients and serve.
Store in fridge. With fresh lemon juice it will last approx 7 days.
